Dr. Vincent Grèzes est professeur associé en management de l'innovation, management stratégique et management international à la Haute Ecole de Gestion de la HES-SO Valais-Wallis à Sierre. Il est aussi responsable du module Veille et Tendances du Master HES-SO Innokick à Lausanne. Il a reçu son doctorat en intelligence économique et stratégique de la faculté de Droit et Sciences politiques de l'Université de Lyon 3. Ses intérêts de recherche sont l'innovation ouverte et collaborative basée sur l'analyse des écosystèmes, ainsi que la veille stratégique à destination des décideurs privés et publics, la création de valeurs partagées par les entreprises, et l'innovation de modèles d'afffaires. Vincent a capitalisé des expériences professionnelles dans le renseignement commercial et les études de marché et a accompagné de nombreuses organisations dans l'intégration de processus de management, de créativité et la réalisation de diagnostics stratégiques.

Description du projet : According to the discussions with HOTREC, the information needs concern especially regulatory trends and civil society and authority's actions in Europe (at all relevant levels) related with the 'private accommodation's' sector. However, HOTREC is also interested in expert information in the sector such as new studies and reports on the 'private accommodation' sector. Hence, the monitoring process should take into account information about the 'private accommodation's' sector such as: - information from the competent regulatory authorities of European countries (incl. non-EU countries) and the European Union, - information from the companies involved in this sector, - statistical data from the European countries, - media (& social media), - expert information (studies and reports) from Ra&D organisations (academics, etc.).

Résumé:

Die Hochschule für Wirtschaft (HEG) der HES-SO Valais-Wallis hat eine Studie durchgeführt mit dem Ziel, potenzielle Wertschöpfungslösungen auf Basis der Kreislaufwirtschaft zwischen dem touristischen Ökosystem und angrenzenden wirtschaftlichen Sektoren zu entwickeln. Ziel ist es, den Ressourcen- und Wissensaustausch zwischen den Akteuren im Tourismussystem im Zusammenhang mit potenziellen Lösungen der Kreislaufwirtschaft zu fördern. Die Ergebnisse dieser Studie wurden auf zwei wissenschaftlichen Konferenzen vorgestellt. Die vorhandenen Ressourcen der Falldestinationen Crans-Montana und Pfyn-Finges wurden identifiziert, interne und externe Beispiele analysiert und schlussendlich neue zirkuläre Netzwerke die Werte für alle Beteiligten schaffen kreiert. Schlussendlich wurden Szenarien zur Umsetzung von Kreislaufwirtschaftslösungen für Tourismusakteure erstellt, sowie regionalen Interessengruppen vorgeschlagen. Dieses Kapitel bietet eine Zusammenfassung der Ergebnisse und Methoden, um das erlangte Wissen über bewährte Praktiken im Bereich der Kreislaufwirtschaftslösungen zu teilen und Tourismusakteure zu inspirieren

Designing a sustainable, circular culinary system

Résumé:

The purpose of this paper is to design a sustainable, culinary system based on the principles of circular economy and systemic design integrating restaurants and hotels of a rural tourism region. The overall research question is: How can the current fruit and vegetable food system be transformed into a sustainable and circular culinary system creating benefits for all stakeholders? As the main aim of this exploratory study is to understand the challenges and experiences of the different actors involved in the current food network rather than measuring flows, the researchers adopt a qualitative approach based on the principles of systemic design. The authors conducted 15 semi-structured interviews with different actors along the value chain in the canton of Valais, Switzerland. The results show that among the factors needed to create a sustainable, circular local food network are a centralized distribution system, efficient transport, better food waste management, sensitization/education of different actors, and better promotion of regional food. The resulting model for a sustainable and circular culinary system includes a regional hub that coordinates the different material and relational flows, the transportation system, and promotional activities including a central marketplace platform. The results are of particular interest for policy strategies focusing on the promotion of regional food networks. In terms of practical applications, the study suggests different solutions to transform current food systems into circular, re-localized food networks that help valorize local food in rural tourism regions.

Seit zwei Jahren arbeitet der Gemeindeverband von Crans-Montana (ACCM) mit der Hochschule für Wirtschaft der HES-SO Valais-Wallis im Rahmen eines Ausbildungsprogramms für digitale Transformation zusammen. Dies ist eine Gelegenheit, lokale Unternehmen an den Innovationsübungen der Studierenden teilhaben zu lassen. Diese Zusammenarbeit, die von lokalen Politikern unterstützt wird, ermöglicht es den Forschern des Instituts für Unternehmertum & Management, ihre Methoden der kollaborativen Innovation anzuwenden, und den Unternehmen, gemeinsam mit anderen Unternehmen der Region Lösungen zu entwickeln. Im Rahmen der Ausbildung nehmen in jedem Herbst drei bis vier lokale Unternehmen an der Übung teil, um ihre Marketingstrategien zu verbessern und Wege für eine Zusammenarbeit bei der Bereitstellung neuer Dienstleistungen zu finden. Diese Methoden werden auch zu jeder Jahreszeit in Form von Workshops angewandt, um die Unternehmen bei der Stärkung ihrer Position im lokalen Ökosystem zu unterstützen. Dies ist eine Ergänzung zu anderen Angeboten zur Integration von Unternehmen in die Lehrpläne, wie z. B. die Durchführung von strategischen Diagnosen für Unternehmen in den Kursen Strategisches Management und Internationale Strategie.

Résumé:

This chapter focused on academic entrepreneurship at HES-SO through the case of the Business eXperience program. The study demonstrated that academic entrepreneurship produced positive impact on research commercialization and university knowledge transfer. It also provided evidence of the appropriateness of using the seven aspects of the holistic entrepreneurship framework to measure the influence of the internal and external environments in stimulating academic entrepreneurship and the importance of teamwork for achieving sustainable success.

The purpose of this chapter was to analyze international and cultural aspects that academic entrepreneurs must take into consideration to support or hinder academic entrepreneurship. We elaborated on international and cultural aspects to be taken into consideration to successfully undertake an academic entrepreneurship journey, such as cultural, administrative, geographical, and economic distance. We deepened our understanding of cultural distance by summarizing the most used sociological approaches. Finally, we discussed the personal and institutional factors that can support or hinder entrepreneurship success, such as cultural sensitivity, cultural awareness, and the concept of academic learning organizations.

This chapter analyzes the actions of the several actors of a regional ecosystem, through a three-level analysis, taking into account the micro level with (1) the analysis of individual measures and innovations implemented during the first semi-containment by managers, the meso-level with (2) the measures taken by professional associations, and the macro level with (3) the analysis of the measures taken by public authorities and professional associations. Despite procedural and financial support offered by municipalities and business associations, key findings show that companies adopted different strategies. These observations lead to a discussion about disruptive and sustainable innovations. Scenario planning techniques were proposed to identify likely futures.

Background: A firm’s cooperative strategies are a fundamental issue in the search for business growth avenues, but a system that eases the emergence of coupled open innovation appears to be missing. Objectives: This paper describes a business networking tool to foster coupled open innovation emergence. Methods/Approach: We adopted a methodology based on design science comparable to grounded theory because solutions emerged by testing a design artefact with companies. Results: We designed and tested an artefact designed as a game to encourage participants to meet as many partners as possible. It is based on collaborative innovation mechanisms and gets inspiration from fields such as organization design, service design, and prospective design. The proposed artefact comes as prescriptive rules that support managers' open innovation opportunity elicitation. Conclusions: From a practical point of view, we contribute by helping companies find emergent open innovation opportunities. From a theoretical point of view, this artefact is part of an emergent theory of object-oriented coupled open innovation mechanisms.

Cette étude porte sur le potentiel des véhicules publics autonomes électriques pour les destinations touristiques alpines. Le dilemme entre tourisme et mobilité dans ces régions repose sur la coexistence d’une forte demande de mobilité et d’une sensibilité à la protection de l’air pur et de la beauté naturelle qui représentent d’importants atouts. Cette étude se concentre sur les opportunités, les défis et les éléments susceptibles d’entraver l’adoption de ces technologies en se basant sur des interviews d’experts. En outre, dans le cadre de cette étude, les opinions et les craintes de futurs utilisateurs de ces véhicules sont évaluées. Les résultats montrent que ces véhicules autonomes publics et électriques paraissent présenter une solution valide pour les destinations touristiques alpines qui souhaitent devenir plus durables et être mieux alignées avec les besoins de leurs touristes. Néanmoins, ces véhicules doivent être gérés d’une manière intelligente pour éviter une augmentation de la circulation. En matière de technologique, ces véhicules ont toutefois besoin d’améliorations pour mieux s’adapter aux conditions particulières d’un environnement alpin.

To constantly adapt to its environment, the company must integrate a learning process in relation to what is happening and become a "learning company." This posture will ensure organizational effectiveness in relation to changes in the environment and allow companies to achieve goals under the best conditions. Our project aims at delivering a competitive and collective intelligence service allowing to support decision making processes through the diagnostic of alignment between internal knowledge of the organization and available external information.

This chapter summarises the evolution of involving the crowd in the innovation and funding process of a project. Une vallée relativement périphérique des Alpes valaisannes, le Val d’Anniviers, a été au cœur d’un projet de recherche appliquée censé redynamiser son tourisme. En effet, la Haute École de Gestion et Tourisme, à Sierre, Valais (Suisse), via ses instituts de recherche en entrepreneuriat, management et tourisme, a développé une démarche de co-création réunissant un large spectre d’acteurs institutionnels, économiques, touristiques et de la société civile et permis de concevoir une offre touristique inédite pouvant intéresser une partie de la clientèle potentielle. Ce produit, à savoir la création d’un « Parc aux étoiles », prétend à un succès certain non seulement de par la localisation et la topographie favorables des lieux pour l’observation du ciel étoilé, mais aussi étant donné la présence, à St-Luc, village situé dans la vallée en question, d’un observatoire et d’un Sentier des planètes, qui reproduit le système solaire à l’échelle humaine. Par ailleurs, l’on constate une demande en hausse pour des offres originales impliquant la décélération, la réduction du stress et un certain retour à la nature. Ce sont des tendances que l’on retrouve dans l’offre de tourisme de ciel étoilé proposée, laquelle vise à faciliter l’observation des astres par le biais de la réduction de la pollution lumineuse. Cet article présente la méthodologie employée dans ce processus de co-création en l’insérant dans les contextes historique, économique, social et environnemental afin qu’elle puisse être reproduite ailleurs, en tenant compte des conditions locales.

In this chapter, we identify possible connections between the notion of co-utility and new business models, which are based on cooperation among consumers. We start with known cases of sharing economy (Uber and AirBnB) to introduce the business model canvas as a tool to support the design of right incentives for cooperation among stakeholders. Then we use the business model canvas to illustrate two research projects and two real-life applications focused on a transportation firm and a boutique hotel.

In this paper, we discuss educational challenges oriented toward service design in order to galvanize the offer of tourism services with an illustration of the Swiss Matterhorn region. Indeed, based on outdated business practices, the tourism economy of Switzerland is losing momentum. In response, it is now vital that Swiss Alpine tourist destinations shift from a construction to an exploitation-based business model. In this paper, we explain this difficult context, make some links with the scientific literature and detail the service design curricula we have implemented over the last years at the Swiss School of Tourism to foster innovation in tourism services. In particular we develop the following thesis. We believe that service design as a way to foster innovation will enable the Swiss Matterhorn Region to stage a spontaneous and authentic revisited tourism experience. Consequently teachers and educators need to train students to gain a holistic appreciation of a touristic experience through knowledge sharing. Thus, they will be able to understand and manage the multifaceted complexity of touristic services.

Despite the presence of a regional innovation system, the gross value added attributed to tourism in the Swiss region of Valais is declining. Innovation policies fostering private initi-atives and collaboration between companies, researchers, and coaching services have been reinforced recently, and policy instruments are in place to support strategic indus-tries. However, no incitement instrument is dedicated to supporting the co-creation and the creation of shared value through local actors. This article presents a co-creation pro-cess of shared value and the lessons learned while implementing a new mode of innova-tion and entrepreneurship in two case studies in the peripheral region of Valais, Switzerland. The aim of the process is the co-creation of shared value-based business mod-els, with an emphasis on the use of crowdsourcing to find new ways to create shared value.

Résumé:

Based on an exhaustive literature review, this paper presents an overview of the evolution of different methods useful for defining competitive intelligence needs, where the information helps the firm to justify its strategic decisions, the analysis of the early warning topics and the elements of the competitors' environment and the actors influencing the organization or its value system, and their categorization. These findings are part of a doctoral study aiming at identifying the usefulness of data coming from open intelligence. The researcher presents, on one hand, a categorization of competitive intelligence needs, and on the other hand, a synthesis model that assists managers in defining competitive intelligence needs. It also aims to show how to foster innovation.

Analysing and designing circular value networks for sustainable tourism – a case study

This exploratory study addresses the lack of literature on circular value networks in sustainable tourism ecosystems. The authors argue that circular, cross-industrial value networks can optimize the use of both tangible and intangible resources within a tourism region, fostering sustainable development. This is particularly relevant given tourism's significant CO2 emissions and its role in addressing SDGs such as goals 3 (good health and well-being), 8 (sustainable economic growth), and 12 (sustainable consumption and production). The central research questions are: “How can unused regional resources in a tourism context be valorised?” and "How does integrating circular value networks in a tourism destination contribute to sustainable development?" Using systemic design methodology (Battistoni et al., 2019), the researchers identify unused resources and existing and potential cross-industrial circular value networks in the Regional Nature Park Pfyn-Finges in the canton of Valais, Switzerland. They analyse selected value networks, examining their potential, challenges, and impact on all three dimensions of sustainability, and design ideal value networks based on these findings. The study highlights the significant potential of unused resources to enhance circular multi-actor value networks within a tourism destination, contributing to all aspects of sustainability and boosting the destination's resilience.

Addressing the need for mechanisms to promote collaborative innovation aimed at developing the circular economy, this paper presents the results of an experiment aimed at proposing a solution for generating collaborative projects to make the most of under-exploited resources and create project groups based on the capabilities of the participants. Based on a design research approach, we collected data from a group of 25 participants and tested the model of the three gates of coupled open innovation to generate proposals for circular economy projects based on the combination of the essential factors identified in the model: markets and resources. Drawing on the power of Microsoft Copilot, our experiment generated 6 customized ideas based on the capabilities described by participants. We compared these results with a previous experiment realized without AI, but gamification incentives. The introduction of AI into the co-innovation process considerably improved the speed and quantity of ideas generated, despite time constraints. Feedback from participants was positive, but we identified ways for improvement. The experiment demonstrated the ability of AI to generate fast circular economy solutions elicitation through a crowd and fast potential partner identification and business cohort composition.

This paper presents a study aimed at defining the limits of research, by asking when a researcher should stop investigating. The question seems obvious at first glance, but our exploratory research shows that the answers vary greatly depending on the context of the research. The learnings from this research are intended to provide food for thought for students, entrepreneurs, and researchers, to shed light on the limits of research, the conditions of validity and the biases limiting the validity of the knowledge creation at the end of research, as well as other characteristics allowing or obliging the researcher to stop. This paper also compares different epistemological approaches to the definition of the term of the knowledge project and its limits. The methods used to answer this question include a purposeful literature review, as well as interviews with selected experts from different research fields such as social sciences, management, business informatics, sociology, geography, engineering, and entrepreneurship, as well as research and development experts in several Swiss SMEs. In conclusion, this paper summarizes what we have learned about the definition of the term "research".

The tourism industry is facing many challenges, including reducing the ecological impact of its activities. To adapt to it, some tourism destination stakeholders have undertaken actions that increase the resilience of the local tourism ecosystem by reducing resource consumption, while satisfying the demand expressed by their customers to consume more sustainable tourism offers. As tourism is systemic by nature, researchers used principles of circular economy (CE) to identify potential improvements in two close tourism destinations in Switzerland: Crans-Montana and Pfyn-Finges. In this paper, we present on the one hand, the method of elicitation of best practices we followed, and on the other hand, an important step in our research regarding the analysis of the type of resources shared between actors (e.g. material, HR, information) as well as the role of the different actors involved along the tourism value chain. A benchmark of the best practices of EC at the international level allows us to highlight the main material flows exchanged between the tourism value chain and its related industries.

Learning measurement with mind mapping is based on the notion of representation and on a constructivist approach that induces a modification of the learners' world representation due to the learning. Mind mapping is recommended in the literature because of its ease of adoption by learners, its simplicity of use, its way of explicating concepts, and the links between concepts. The assumption is that through a reflective approach during a semester, the learners should develop an understanding at a higher level than that of the micro-level of the exercises. It moves reflection from surface learning to deep learning towards strategic learning. We applied this approach with two classes of Bachelor students and carried out mind-mapping at different times of the semester to get the learners used to it and to analyse the evolution of their representations of Business strategy. Results show that some of the learners developed in-depth learning with minimal guidance. However, areas of improvement can be shared to facilitate future experiments, such as the modalities of guiding the learners, the quantitative way of evaluating the complexity index can be questioned, and the tool's adaptation to the learners' cognitive styles.

The tourism industry faces numerous challenges which have demonstrated the vulnerability of tourism. It is even more important for tourism destinations to gain in sustainability and resilience. This paper presents the results of a first step in a wider project which aims to identify replicable good practices to support the development of the circular economy (CE) in the tourism ecosystem and strengthen the resilience of tourism stakeholders. In this first step, our research question is: What are the links between the industries on which the circular economy flows are built? This first step allowed us to elicit best practices of CE in the tourism field and to identify the related industries for each tourism activity. This enables the elaboration of hypothesis of transposition of CE activities to other actors, that will be achieved in the next step of the main research project.

The purpose of this paper is to propose a conceptual framework dedicated to analyzing organizations regarding their settings to support or hinder open innovation and to propose a way to find best innovation strategy. We elaborate on the settings to take into consideration to successfully undertake an open innovation journey, such as process as vectors of opportunities and capacities as assets to seize the opportunities. We deepen our understanding by studying the most recent typologies and maturity models of open innovation strategies. Then we discuss the personal and institutional factors that can support or hinder open innovation success, such as absorptive capacities and cultural awareness. Finally, we considered the settings allowing entrepreneurs and organizations to evaluate their open innovation maturity regarding their settings and management conditions regarding their open innovation process and capacities allowing to manage the open innovation related knowledge. This paper allows organizations’ managers, employees and students, to identify an organization's maturity in terms of open innovation activities and knowledge management awareness.

This paper proposes a technique able to support coupled open innovation opportunities elicitation. Researchers suggest solution toward companies that need techniques to identify partnership opportunities in order to cope with increasing competition. The need for practical mechanisms to identify open innovation opportunities has indeed emerged from the literature. Hence, our research focuses on identification and testing of coupled open innovation opportunity elicitation with simple mechanism. For this purpose, we realized a quasi- experimentation, using methodologies of design science for solution prototyping, participant observation and ethnographic interviews as well as service blueprint to analyze the service providers situations and identify the areas of improvement, and finally apply the tools of blue ocean strategy. The emergent opportunities have been analyzed through an opportunity matrix, based on differentiators and non-negotiable elements of each stakeholder. The proposed coupled open innovation blueprinting process allows participants to share information and create alliances in a limited time and space and for a very low cost.

The purpose of this paper is to analyse the international and cultural aspects that academic entrepreneurs must take into consideration and propose a conceptual framework dedicated to theanalysis of higher educational institutions (HEI) regarding their international settings and the support or hindrance to academic entrepreneurship. We elaborate on the international and cultural aspects to be consideredto successfully undertake an academic entrepreneurship journey, such as cultural, administrative, geographical, and economic distances. We deepen our understanding of the cultural distance by summarizing the most used sociological approaches. Then we discuss the personal and institutional factors that can support or hinder entrepreneurship success, such as cultural sensitivity, cultural awareness, and academic learning organization. Finally, we considered the settings allowing entrepreneurs to develop their cultural sensitivity in the academic context and propose a typology of the HEI regarding their settings and management conditions of entrepreneurship regarding their internationalization and cultural awareness. The results allow university managers and professors or students to identify their organization's maturity in terms of international and cultural awareness towards fostering innovation and entrepreneurship.

Following a two steps research design based on inductive and deductive methods, researchers tent to understand the paths of emergence of coupled open innovation opportunities. The aim of this research is to provide rules to managers in order to support their open innovation thinking process. Firstly, this paper presents an emergent theoretical model based on the analysis of 20 cases, and aiming at analyzing the articulation of three boundary objects useful to develop coupled open innovation strategies and to deepen the understanding of the impetus of coupled open innovation. The three identified dimensions are Vision, Resources and Market. Secondly, according to the emergent model of coupled open innovation, researchers established technological rules and mechanisms dedicated to accompanying managers in the open innovation opportunities elicitation process. Those rules were tested with quasi-experimentations of the three identified rules of coupled open innovation opportunities elicitation. Examples are presented in this paper to illustrate the proof of concepts. The results of the tests show that those rules can accompany managers in their open innovation opportunities definition phase. This paper tends to lay foundations for further investigate paths toward coupled open innovation opportunities elicitation, especially in the aim of elaborating prescriptive rules to support managers innovative thinking.

In this paper, we describe a business networking tool aiming at fostering collaborative innovation emergence between actors. This tool is designed as a game to encourage participants to share and meet as many partners as possible in a given time. This artefact is based on previous research aiming at identifying collaborative innovation mechanisms and getting inspiration from different fields such as organization design, service design and prospective. The proposed artifact comes as a set of prescriptive rules (Van Aken, 2005) that support managers' co-innovation opportunity elicitation. In preliminary test, 30 exchanges emerged among 20 participants, who did not know each other beforehand. Our contribution is twofold: from a practical point of view, we contribute to help companies to find emergent co-innovation opportunities; and from a theoretical point of view, this artefact is part of our emergent theory of object-oriented co-innovation mechanisms.

The practice of citizens' democratic rights and duties must be questioned at a time when many of our daily customs and rituals are being challenged and redefined by the digital revolution. While retailing has already profoundly altered our daily interactions, any practice related to the exercise of democracy remains very traditional and this seems to be at the root of an ever-increasing disinterest in politics, especially among young people. We had the opportunity, through a qualitative survey, to study this theme in relation to the complete revision of the Constitution of the Canton of Valais in Switzerland. The latter follows a democratic process in which 130 citizens of Valais were elected to revise the Constitution. In addition, a consultation was put online on a platform as a pilot project from 7 November 2019 to 5 January 2020 with the aim of encouraging citizen participation and thus giving a voice to all the inhabitants of Valais. In this paper, we present the main elements of this qualitative survey based on the technique of "hypothetical scenarios", conducted among 20 Valais residents interested in politics (the majority of the interviewees did not use the online platform, a minority did, and some of the interviewees are “stakeholders” linked to the Constituent project). In addition to the survey based, we also carried out a "netnographic" analysis using the 1,235 contributions left on the platform during the pilot project period. The analysis of the transcripts made on the basis of the semi-directive interviews shows an interest in these digital citizen platforms. However, the respondents recognise that the citizens' platform is a first test and that more innovation and testing in this area is needed to involve people who are not currently participating in the democratic debate. This is somewhat confirmed by our netnography, as all the content of the platform has been produced by people with a proven political culture.

In this paper, we describe a mobile service, which is aimed at cooking chefs and that generates list of ingredients for recipes made of local products. We focus on a specific type of cooking recipes based on plants, which are used in cultural food practices worldwide to support wellbeing ("phytonutrition"). Researchers in food technology have been successfully developing food recommenders but there is a gap concerning the notion of phytonutrition changes the set of required functions and the theoretical framework to assess the software. We describe an endtoend support system for recipe design in compliance with European regulations concerning phytonutrients. Results of a longitudinal test, which was done in a hotel in the Alpine region, show that our software allows chefs to conceive a set of dishes, which increase the satisfaction of customers and have a positive effect on their wellbeing.

In the mobility sector, a large number of new technologies such as autonomous vehicles (AVs) and services (e.g. carpooling) are emerging. AVs involve not only passengers, but also authorities, manufacturers, public transportation companies, law enforcement officials, drivers, pedestrians and shopkeepers. Applying phenomenology - the description of a phenomenon's live experience [1] - to this case of Mobility as a Service (MaaS) contributes to understanding its complexity and provides insights of users' perception of risk related to the AVs. This new technology brings many opportunities to improve our mobility system. Identified potential risks can affect the efficiency and the perception of the service. In this exploratory research, we have employed a technique called experimental phenomenology to identify these risks. The major advantage of this approach is to take into account the perception of passengers as a driver for design.

In this article, we describe the preliminary results of an ongoing project aiming at increasing the attractiveness of Alpine destinations in Switzerland, by means of a very widespread hotel. We investigate how to design new services for wellness tourism, which target (a) “young elderly”, whose age is comprised between 60 and 75 years, and (b) enterprises interested in meetings, incentives, conferencing and events. The first customer segment is known to be proactive in seeking to improve or maintain health and quality of life, while medical tourists generally travel reactively to receive treatment for a diagnosed disease or condition. The second customer segment mostly seeks for complementary activities to be done after work or as main topic for a seminar. Accordingly, we have conducted interviews with different stakeholders: hotel managers, owners of firms producing natural components for wellbeing and tourist officers. In the end, we highlight a set of relevant findings that should be taken into account when setting up wellness tourism in a dispersed area.
